Hey Besties! I’m having so much fun making sugar cookie pops lately and thought I’d share this spring flower cookie bouquet! The Valentine’s Day bouquet I shared earlier this year was a huge hit so I knew it would be a busy spring. While there are endless cookie bouquet design options, flowers are such a natural choice and always look beautiful on assembled. So today I’ll cover three different royal icing flower designs and show exactly how I build my cookie bouquets. It’s actually a lot easier than you’d think, so I hope this inspires you to create your own! Let’s jump in!

Let’s start with a delicious cookie canvas! For today’s bouquet, I used my lemon cutout cookie recipe which is super popular, especially in the spring and summer! No chilling needed, seriously…these are super quick, simple and delicious. And with zero spread, there’s no reason to chill your dough. But you always have options! I always bake all of my cutout cookies on THESE perforated baking mats, which ensure even baking, zero cookie growth, and the pretty pattern on the back. I bake all my batches and clean at the end of the day – easy peasy!
Cookie Pop Thickness
Normally I bake all of my cutout cookies to 1/4″ thickness, but when make a sugar cookie bouquet, thicker is better. I roll my cookies to 3/8″ for my bouquets and they work perfectly! Using a rolling pin like THIS, makes it super easy to change your thickness anytime for consistency results.
Baking Cookie Pops
It’s worth mentioning that some bakers simply make and decorate their cookies like normal, individually bag and then just tape sticks to the back to create a bouquet. That’s certainly always an option; it’s just not true cookie pops or cookies on a stick. When I create cookie bouquets, I make actual cookies on a stick, as that is what my customers are expecting.
I prefer to bake my cookies and add the sticks when the cookies are fresh out of the oven. This way, the cookies cool with the sticks inside, making them super secure. I can also bake a full tray of cookies, as usual since there aren’t sticks in them while baking. In my trials, this is what works best for me!
Sugar Cookie Bouquet Supplies
Sticks
I use THESE cookie sticks for my bouquets. These give me the height I want for my bouquet and the freedom to stagger my cookies at varying heights. I prefer cookie sticks over skewers since the mom in me just can’t handle giving a cookie pop to a kid knowing there is a sharp skewer inside.
Containers
Dollar Tree comes through for me time and time again with pails like THESE for my bouquets. I love these for spring and summer flower cookie bouquets! They are the perfect size, a fabulous price and allow me to make bouquets for 6, 12 or even more cookies. And best of all, they are cute and perfectly stable when loaded with cookies!
Bouquet Foam
This is where bakers struggle with the best way to build bouquets. You want your bouquet to be stable, not tippy and allow for you to build a beautiful, secure bouquet. And if you’ve watched tutorials on making cookie bouquets before, it commonly involves measuring, carving and hot glueing flower foam. This Bestie doesn’t have time or energy for all that. 😆 I use THESE tapered foam pot inserts from Dollar Tree for my cookie bouquets. I use 2 in each container, no carving or glueing needed. Which then also allows the recipient to reuse the container for something else after enjoying their cookies.
They perfectly fit in the pails and make building my bouquets super quick and easy. And economical! $3.75 for my Dollar Tree supplies for each bouquet is hard to beat.
Tissue Paper
I do use 2-3 sheets of tissue paper in creating my sugar cookie bouquets as well. Pick that up at the Dollar Tree at the same time and you’ve got enough for many bouquets.
That’s it! No other tools or glue needed. You’ll see how this all comes together in the demo video.

Let’s make a Flower Cookie Bouquet!
Before we can build our bouquet, we need to decorate! If you already have a royal icing recipe you love, I love that for you! If you need a fabulous one, THIS explains how I make my royal icing every day. Simple to make and gives me amazing results and flavor consistently. It’s also very popular with cookiers who make a lot of flowers, like we’re doing today. It’s easy to pipe at even the stiffest floral consistencies. No hand cramps!
And on that note, you will want to use a STIFF flower consistency to keep the best dimension and details in your royal icing flowers. If you’d like to see what that looks like, you can see it in my consistency guide HERE.
I used 3 different decorating tips with these flowers – 97, 103 and 125 Wilton tips. Using very simple techniques, as shown in the video below, anyone can make these designs.
Assembling a Flower Cookie Bouquet
As previously stated, I insert my cookie sticks into my cookies fresh out of the oven. Pushing them almost all the way to the top. And if you can see your stick shape at all on the top of the cookie, use a spatula to just flatten them out again. Then let completely cool.
I decorate my cookie pops with the sticks in them, since they were inserted before the cookie cools. This way, the stick is secure inside the cookie. Even if I turn my cookie pops upside down, the cookies stay on the sticks.
While normally I heat seal all of my cookies, there isn’t a way to heat seal with a cookie stick in place. I use my favorite cookie bags upside down to individually wrap my cookies. I usually trim about 1.5″ off the length of the bag so they look perfect. And use ribbon or THESE twist tie bows to secure the bottom of the bag around the stick. As long as you tightly tie or twist tie your cookie bag, your cookies will remain fresh.
