And of course, I’m sharing all of my best tips for achieving beautiful, puffy lettering too! Let’s go!

The Royal Icing Recipe We Adore
Again, you may already have a royal icing recipe you love and I love that for you! But if you’re just starting out or want a recipe that is reliable and offers beautiful results and flavor, THIS explains exactly how we make our icing every day. We use this for ALL of our royal icing cookie decorating in all of the consistencies we need to make delicious cookie art. I do want to stress that when it comes to making perfect royal icing, HOW you make your icing makes all the difference. We never have color bleed, craters or other issues that commonly plague cookiers. And it’s all due to the method in how our icing is made. It’s very simple, but each step is critically important.
Achieving Puffy Icing for Writing
In the cookie decorating world, everything comes down to consistencies. You will use a slightly different consistency for flooding, piping, writing, flowers and everything in between. The consistency we use to achieve this beautiful puff is described as glob with no ribboning. Once you’ve colored your icing, use a spray bottle of water, for best control, to thin to the consistency you need. When you pick up a blob of icing on a spatula, it should fall off your spatula back into the bowl in a big glob with little to no ribboning. If it’s ribboning off your spatula, it will be a tad too thin for puffy fonts. If it’s too thin, just add a small amount of powdered sugar and mix by hand to achieve this consistency. It should require just light scribing once you pipe it, to perfectly heal/smooth itself. This consistency will keep great shape for your intricate fonts and hold good puff without the letterings or shapes pool together.
Quick Setting Your Royal Icing For Puff
We use a dehydrator to quick set all of our royal icing to get a beautiful shine, lock in puff, avoid any cratering and speed up the drying process. You can learn about all the benefits of using a dehydrator for cookie decorating HERE. Cookiers can commonly be skeptical whether a dehydrator really makes a difference, until they try it, then they never look back. In my opinion, it’s the easiest way to elevate the finish and results of your cookies with no effort.
If you don’t want to use a dehydrator, I suggest putting your cookies in a cool oven and just turn the light on. The heat from the light can be enough to help quick set your icing. You won’t get all the same benefits as you would with a dehydrator, but it will help! Regardless, using a quick setting method will help you lock in the puff you want!
Using a Cookie Decorating Projector
Full transparency: I’d NEVER be able to achieve these fonts without a projector. The vast majority of cookiers who have beautiful fonts on their cookies are using a projector to aid in this. It is hands-down the best tool cookiers can use to create beautiful art and designs. You can learn all about the projector we use and love HERE, along with guidance on how to use it!
