Hey Besties! We’re doing something completely different today and I hope you love it as much as I do! Every spring I see so many fun bird’s nest cupcakes and other baked treats. And while we certainly can, and have, made adorable nest cookies on our flat sugar cookies, this year we got creative! They were super easy, fun and actually opens up a whole stream of new ideas as well! I hope you love these and get some inspiration to create your own or use the technique for other creative designs!
No-Chill Cutout Cookie Recipe
You can use your favorite sugar cookie recipe or use one of my no-chill cutout cookie recipes! For these bird’s nest cookies, I used my lemon cutout cookie recipe, since it’s so popular in springtime. But you’re welcome to use any one of the incredible flavors available HERE! Or if you’re simply looking for a phenomenal vanilla recipe, THIS is my go-to for my cookies. I never chill any of my dough and achieve perfect shapes every time and delicious texture and flavor.
how to Make cookie cups
Bestie, this is so ridiculously simple! All you need is a silicone mold like THIS and you’ll simply form your cutout cookies over the top of each dome before baking. No need to put anything on the silicone mold, the cookies will not stick. For structure, I always put the mold on top of a cookie sheet so I can easily move it in and out of the oven. This is what they look like before going into the oven!

You can play with the size of your cookies, making them smaller or larger, to create the shape you want. I bake these for 1 minute longer than my normal cookies, so in this case, I baked these for 9 minutes. Then let COMPLETELY cool on the molds before removing them. If you try to remove them while they are still warm, they will break.
Decorating birds nest cookies
These cookies are super simple to decorate and could even be done by kids! I chose to use my normal royal icing to decorate these, but you could also use buttercream too. And once my icing has crusted, I add Cadbury mini eggs and piped leaves to top them off.
Another fun tip I discovered while making these…if you put them in a dehydrator to set your icing with the Cadbury eggs in there, the eggshell will commonly crack, which is cute for bird’s nest cookies! Otherwise, if you don’t want the eggshells to crack, then just don’t put them in the dehydrator. Super cute either way!
I package these like normal, heat sealed, in 5×7″ cookie bags for the space they need. You could also package them so they stand up and add a cute bow on top too!
