Hey Besties! I know I’m not the only one who LOVES all things chocolate! I mean, have you tried my chocolate sugar cookie recipe? If not, you really should! But today, I’m bringing you my favorite chocolate royal icing recipe! Yes, you read that right, we are now going to be decorating our cookies with chocolate royal icing! And it has the most perfect, dreamy chocolatey flavor! You know me, I LOVE playing with fun flavors so I can’t wait to use this for all kinds of fun combinations!
Another thing that I LOVE about this recipe is that it is SO simple! It’s actually easier than making normal, vanilla royal icing. You basically put it all on the mixer, turn it on, set your timer, multitask and BOOM, it’s done! So far, I’m LOVING this chocolate royal icing on my favorite go-to vanilla sugar cookies! YUM!
For key ingredients, such as meringue powder and Dutch processed cocoa powder, here are the brands I use. I will admit, Genie’s Dream Meringue Powder is my FAVE, but they have been experiencing a lot of supply chain constraints, so ChefMaster meringue powder is my favorite alternative. For cocoa, I prefer the Ghirardelli Dutch processed cocoa powder that I can pick up from my local Walmart.
Chocolate Lovers Royal Icing
Ingredients
- 2 lbs Powdered Sugar
- 1/2 cup Meringue Powder
- 6 tbsp Dutch Processed Cocoa Powder I use Ghirardelli
- 1 tbsp Vanilla Extract
- 1 cup Warm Water
Instructions
- Mix your powdered sugar, meringue powder and cocoa powder together, until well-blended in a large mixing bowl.
- Add your warm water and vanilla while mixing on low
- Once ingredients are incorporated, mix on medium-high for 6-7 minutes, until soft peaks form.
- You can now divide into smaller amounts and add powdered sugar to thicken or use a spray bottle of water to thin the royal icing to the desired decorating consistencies.
