These fiesta themed cookies have been all the rage this year and for good reason! They are so colorful and full of personality! I’ve seen cookiers swear these off since the pinata can lead to some hand cramps, but it’s a small price to pay for the adorable cookie! I had the pleasure of creating a small set for a good-bye party they were hosting. They were saying “Adios Amigos” to some friends and these cookies were a huge hit! If you love decorating with fun colors, these are a theme you’ll have to try!

Fiesta Cookies Template

Now, if you read THIS recent post, you’ll know I’m not a fan of buying all the cookie cutters if you may not ever need them again! In this case, I had the plaque cutter I needed, but the cactus cutter I had was too small and I needed the pinata shape. So, I made templates for the cactus and pinatas and hand cut those shapes for this order. I’m sharing the template here if anyone would like to download and make templates to hand cut as well! This template will give you cookies about 3.5-4′ in size. If you’ve never hand cut cookies, it’s super easy and THIS post will teach you how.

Fiesta Cookies Colors

I know I’m in the minority here, but I LOVE mixing and bagging royal icing colors! So for me, this set was super fun! I used all ChefMaster colors with the bold, pinata colors as inspiration.

Designs

I made three designs since this was a small set.

  • Cactus: Flooded in green, once crusted over, I added outlines, piped details and pink flowers
  • Plaques: Flooded in white, once crusted over, I added the colored garlands and finally added the “Adios Amigos” in red font, using font “Tasty Brownie” from Dafont.com.
  • Pinatas: Using thick icing, alternate squiggly lines using a small hole in a tipless bag. You do need to let each row of color set before adding the next row. The hardest part is making sure your lines are straight!
Fiesta Cookies

I’ve seen several variations of these Fiesta Cookies so let your creativity run wild! With all this personality, these are sure to delight! I hope this provided some inspiration and that some cookiers can put the templates to good use!
