How to Make Molded Royal Icing for Your Cookies!

Hey Besties! You may know Bestie-land is the place of many options, hacks and simple ways to make beautiful treats! Which is why I’m excited to share today’s tutorial on making molded royal icing with you! Yet another tool for your decorating arsenal! You know all those super cute silicone molds in the baking aisle? Yes, we’re putting those to good use for our cookies today! Not gonna lie, it took A LOT of experimenting and trial runs, but I’m happy to share this tutorial with you to save you all that work! That’s what a Bestie is for, right? Let’s dive in!

What is molded royal icing?

Good question! Molded royal icing is really just another way to use royal icing to make fun design elements for your cookies or other treats. By using REALLY stiff royal icing (think play-doh consistency), combined with silicone molds, you can create all kinds of fun shapes. The options are really endless, and you’re really only limited by the silicone molds you can find…and there are thousands available. In today’s example, I’m using flower and leaf molds to add to my decorated cookies.

And while I have found a few different techniques, I tried several different approaches to find what works best for me. My goal is to always help you bypass all the testing and headaches and skip right to success with all my tutorials. And once I dialed this technique in, it was actually super easy and fun!

what you’ll need for molded royal icing

You’ll need silicone molds, royal icing, additional powdered sugar and some cornstarch, along with a brush for dusting your molds.

I used my same royal icing recipe I use for all my cookie decorating, which you can find HERE. No changes were necessary in how I made my icing in order to use this technique. It does all come down to the consistency, which we’ll cover next.

I used THIS set of silicone molds, which I used previously for chocolate work! I love that I can use all my silicone molds for more purposes now! You may already have some silicone molds from chocolate or fondant work that you can use to learn this technique. But let’s just say I look at all the silicone molds differently now, knowing I can use them with my royal icing too!

Molded Royal icing tutorial

Alright Bestie, we’ve got some molds, and we’ve got our royal icing, so let’s do this! You’ll see all this in the demo video below, but a few key points before we get there.

Color the icing you want to mold and then you’re going to mix in powdered sugar to create a Play-doh consistency. You will get to a point where you’re kneading in the powdered sugar with your hands. When your icing is no longer sticky and you can’t feel any moisture in it, that’s when it’s ready.

Dust your molds with cornstarch and then add your icing to the mold, making sure you’re giving them a flat back. As soon as you’ve molded it in well, you’re going to remove it! The icing does not remain in the molds; they will fully dry after coming out of the molds.

I do let my molded royal icing dry completely overnight. They are basically transfers once fully dry. Obviously handle with care but are not super fragile once fully dry. You can now add to your cookies just like you would add a royal icing transfer. In the video, you’ll see I added some to wet flood and some to dry. I personally prefer adding to dried flood, so I have better control on placement, and they don’t sink at all in the icing. But this is really cookier preference!

One last point worth mentioning because I know you’ll ask! How do these taste or what is the mouth feel? These dry hard, so they have a little crunch, but are NOT rock hard by any means. At least using my icing recipe, they are not hard and not even noticeable when eaten on a cookie.
